Food Anatomy
工作中偶然的機會,我解剖了一根法棍。它外
表看起來規律起伏,內里的構造卻像海綿一樣
難以捕捉。在用線條轉譯的過程中我意識到,
這些看似隨機的氣泡存在某種秩序——在重力
和表面張力的作用下形成的一個力場。我相信
這個力場是可以被分析和計算的;我也相信線
條本身——它的粗細、方向和密度——能夠直
觀地反映力的流動,無須過多言語。於是我們
著手在廚房中開始一系列解剖實驗,從每日食
材中尋找宇宙的秩序,盡管只能模糊地感受它
們。我們在哈密瓜的頂視圖中看見了以兩極為
原點的蛛網;在蘑菇的底視圖中看見了漂浮上
升的水母;在大蒜的橫切面中看見了細胞;在
彩椒中看見了山的崇高和洞穴的神秘;在番茄
的縱切面中看見了樹幹,它從中心延伸至表
皮,包裹住一個世界,恰似我們在《可見之
地》中曾構想的星球。

By chance at work, I dissected a baguette. It
appeared to undulate regularly from the outside,
but the inner structure was as difficult to capture
as a sponge. In the process of translating it with
lines I realized that there was some kind of order
to these seemingly random bubbles — a force
field created by gravity and surface tension. I be-
lieved that this force field could be analysed and
calculated, while the line itself — its thickness,
direction and density — could visually reflect the
flow of forces without words. So we set out to
begin a series of anatomical experiments in the
kitchen, searching for the order of the universe in
the daily ingredients, even if we could only vague-
ly feel them: we saw in the top view of a melon a
cobweb growing out of the poles; in the bottom
view of a mushroom a jellyfish floating upwards;
in the cross-section of garlic a cell; in a pepper
the sublimity of a mountain and the mystery of a
cave; and in the longitudinal section of a tomato
the trunk of a tree, which stretches from the cen-
tre to the surface, wrapping around a world that
resembles the planet that we had envisaged in
The Wonderland of the Visible.
These concentric, binary, trichotomous or “ran-
dom” structures seem to contain all the meta-
phors of philosophy, science, politics and history.
